Dr. Elif Burcu \u00d6zkan konu\u015fmac\u0131 oldu\u011fu etkinlikte, sadece Roma d\u00fcnyas\u0131n\u0131n ne yedi\u011fi de\u011fil, yeme\u011fin soysal stat\u00fc ile olan ba\u011f\u0131n\u0131 da ele ald\u0131. G\u00f6r. Dr. Elif Burcu \u00d6zkan konu\u015fmas\u0131n\u0131n temelini bunun olu\u015fturdu\u011funu belirtti. Harita \u00fczerinde g\u00f6stererek ortaya \u00e7\u0131kan ticaretten bahseden konu\u015fmac\u0131 Roma mutfa\u011f\u0131n\u0131n bu sayede yeni baharatlarla ve besinlerle tan\u0131\u015ft\u0131\u011f\u0131n\u0131 ifade etti. \u201cRoma mutfa\u011f\u0131 asl\u0131nda \u00e7ok sade.\u201d diye belirten \u00d6\u011fr. G\u00f6r. Dr. Elif Burcu \u00d6zkan \u00e7e\u015fitlili\u011fin ticaret yoluyla sa\u011fland\u0131\u011f\u0131n\u0131 ifade etti. Kat\u0131l\u0131mc\u0131lara aktar\u0131lan bilgilerin g\u00f6rsellerle desteklendi\u011fi sunumda \u00d6\u011fr. G\u00f6r. Dr. \u00d6zkan d\u00f6nemin genel besin maddelerinin ne oldu\u011funa, nerelerden temin edildi\u011fine, d\u00f6neme ait meydanlardaki t\u00fcketim \u015fekillerine de de\u011findi.<\/p>\n\n\n\n<p>Sunumda d\u00f6nemin yaz\u0131l\u0131 metinlerinden elde edilen bilgilerin kat\u0131l\u0131mc\u0131lara aynen aktar\u0131lmas\u0131 kat\u0131l\u0131mc\u0131lar\u0131n \u00f6zellikle ilgisini \u00e7ekti. Roma d\u00f6nemindeki kaynaklardan edindi\u011fi bilgilerden yola \u00e7\u0131karak a\u015f\u00e7\u0131l\u0131k mesle\u011finden de bahseden \u00d6\u011fr. G\u00f6r. Dr. Elif Burcu \u00d6zkan \u201c\u00d6nceden a\u015f\u00e7\u0131lar \u00e7ok d\u00fc\u015f\u00fck seviyedeki hizmetliler olarak g\u00f6r\u00fcl\u00fcyordu. Konu\u015fmac\u0131, d\u00f6nemin tah\u0131llar\u0131n\u0131n ve etlerinin nas\u0131l ve nerelerde sakland\u0131\u011f\u0131, yemek haz\u0131rl\u0131k s\u00fcrecinde hangi gere\u00e7lerin ne ama\u00e7la kullan\u0131ld\u0131\u011f\u0131 konular\u0131n\u0131 g\u00f6rselleriyle birlikte payla\u015ft\u0131. G\u0131dalar\u0131 saklamak ya da tatland\u0131rmak i\u00e7in tuz kullan\u0131m\u0131n\u0131n az oldu\u011funa \u00e7\u00fcnk\u00fc d\u00f6nemin tuza ula\u015fman\u0131n olduk\u00e7a zor oldu\u011fu bir d\u00f6nem oldu\u011funa dikkat \u00e7ekti. \u00d6\u011fr. G\u00f6r. Dr. \u00d6zkan tuz tad\u0131n\u0131n farkl\u0131 y\u00f6ntemlerle elde edildi\u011fini aktard\u0131ktan sonra\u00a0\u00a0\u201cBir d\u00f6nem maa\u015f yerine tuz veriliyordu, maa\u015f anlam\u0131na gelen \u201csalary\u201d kelimesinin k\u00f6keni de tuzdan gelmektedir.\u201d diyerek tuzun Roma d\u00f6nemindeki hayati ve de\u011ferli varl\u0131\u011f\u0131n\u0131n alt\u0131n\u0131 \u00e7izdi.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2>Gastronomi ve Mutfak Sanatlar\u0131 \u00d6\u011frencilerinden Konferansa Yo\u011fun \u0130lgi<\/h2>\n\n\n\n<p>Yo\u011fun kat\u0131l\u0131m\u0131n dikkat \u00e7ekti\u011fi etkinlikte Gastronomi ve Mutfak Sanatlar\u0131 B\u00f6l\u00fcm\u00fc \u00f6\u011frencilerinin say\u0131ca fazla olmas\u0131 sunumun sonunda ger\u00e7ekle\u015ftirilen soru-cevap etkinli\u011finin hareketli ge\u00e7mesine neden oldu. Merak ettikleri sorular\u0131 \u00d6\u011fr. G\u00f6r. Dr. Elif Burcu \u00d6zkan\u2019a y\u00f6nlendiren \u00f6\u011frenciler konu\u015fmac\u0131dan a\u00e7\u0131klay\u0131c\u0131 cevaplara ula\u015ft\u0131. Tamamlanan etkili\u011fin ard\u0131ndan Dekan Yard\u0131mc\u0131s\u0131 Prof. Dr. Aytekin Demircio\u011flu taraf\u0131ndan \u00d6\u011fr. G\u00f6r.
